Autumn… love it for the colors, loathe it because it marks the end of summer and the promise that winter is on it’s way. However Autumn has it’s benefits, sweet pears and feijoas falling from the trees giving home cooks the opportunity to preserve their goodness for warming the colder, darker months ahead.
I am not sure there is anywhere else in the world where you will find people more passionate about the humble yet ridiculously fabulous feijoas. Almost everyone knows someone who has them or wherever you go you see signs of kids making a little extra pocket money at the end of the driveway.
This particular Feijoa Cake has been knocking around for quite a few decades and shared by many people via social media. I have made a few of my own changes including not bothering to peel the feijoas which gives a real feijoa-y depth. I have also replaced the sugar with honey which adds a different dimension and complexity to this wonderfully easy cake.
To make this Easy Peasy Feijoa Cake you will need:
1 cup mashed feijoas
1/2 cup milk
3/4 c honey (or 1 ¼ cups sugar, if you prefer)
1 tsp vanilla
75g softened butter
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
Preheat oven to 180*C.
Place the feijoas into the food processor and blitz, then add the milk, eggs, sugar, vanilla and butter and process until smooth.
Place the dry ingredients in a bowl, then pour the wet ingredients in and mix. Pour into a baking tin and bake for 40-45 minutes, or spoon into cupcake/muffin pans and bake for 20 minutes.
While still warm spoon over a little honey or once cool dust with icing sugar.
